Well before most Japanese start their day, the nation's fish markets are in full swing and the all important tuna auctions are conducted. Japan is the biggest consumer of tuna which is an important element of the food culture. Huge whole tuna are laid out and studied by the connoisseurs, the bells toll to sound the start of the auction and a loud and bewildering system of bidding ensues, understood only by those taking part. In minutes the auction is over and the prized fish is being rapidly dispersed.
