Air Bare: Sarah and Lucy Jenkins, Salt Lakes Good Enough To Eat! (LANDSCAPE 2024)

At Hutt Lagoon, there are a series of marine salt lakes 520km north of Perth, Western Australia. They contain carotenoid-producing algae which gives them an amazing array of vibrant colours depending on the time of day and time of year. The algae are used in food colouring, dietary supplements, cosmetics and are a source of vitamin A. The salt lakes also house the world's largest microalgae production plant that provides brine shrimp as feed for prawn and fish farmers. Tomato Salsa, Vanilla Slice, and Neapolitan Ice-Cream Sandwich (with a minimalist approach) look good enough to eat!
